Chickpea Salad

Delicious and pretty much guilt free. High in folate, soluble and insoluble fibre; low in fat and a low glycemic index.

1

19 oz (540 mL) can chickpeas. drained and rinsed

1/2 cup

plain yogurt

125 mL

1 cup

diced English cucumber

250 mL

1/2 cup

diced sweet red pepper

125 mL

2 tsp

*fresh dill weed

10 mL

1

clove garlic, minced

1

1/4 cup

chopped fresh parsley

60 mL

salt and freshly ground pepper to taste

Combine all ingredients. Chill in the refrigerator for 1 hour. Season with salt and pepper if desired. Serve on a bed of lettuce, or in a pita.

Enjoy.

* Use 1 tsp dry dill weed if fresh is not available.
